Jhoana Mancilla & Manuel Sabas
Meet Jhoana Mancilla and Manuel Sabas. They have participated in the Mercado since June 2018. From the beginning, they started selling Tacos Placeros because they wanted to bring that tradition from their hometown of Puebla.
Similar to a regular taco, the Tacos Placeros are made from handmade tortillas, with choice of meat, beef, pork, chicken, etc. The difference is that a Taco Placero, also known as “Taco de Plaza,” includes rice, beans, sauce, and other ingredients.
“When you have a big family, and you are walking around the plaza looking for food, a Taco Placero allows you to feed the whole family and satisfy their hunger.”
For Jhoana and Manuel, it is essential to share their Tacos Placeros because it reminds them of the Plaza in Atlixco, Puebla. “In Puebla, we know them as very delicious tacos, but also very cheap. When you have a big family, and you are walking around the plaza looking for food, a Taco Placero allows you to feed the whole family and satisfy their hunger. While a Taco Placero has meat, it is not the essence of the Taco, yet it makes it delicious because it is included.”
Nevertheless, in April 2019, Jhoana and Manuel opened up an Italian restaurant in New Brunswick along with Manuel’s brother. Jhoana and Manuel mention, “The opportunity was presented to us, and we are a family that wants to move forward. We both have had years of experience working in restaurants.” Notably, “Manuel worked as a cook for over 18 years in American & Italian restaurants. He loves to cook and enjoys every second of it, whether it’s American, Italian, or Mexican food Manuel has a passion for food.
